Grandma's Whole Wheat Bread Recipe

This recipe has been loved in our family. It brings good memories of those we have loved and those who are still with us today.

Ingredients

  • 9 Cups Fresh Ground Hard White Wheat
  • 3 Cups White High Gluten or Unbleached Flour
  • 2 Tbs Salt
  • 1/2 Cup Powdered Milk (not instant)

Put the above ingredients in a bowl and mix slightly

  • 1/2 Cup Canola Oil
  • 1/2 Cup Honey or Sugar
  • 2 Tbs Lecithin OR 1 Tbs Vinegar OR 1 Tbs Lemon Juice
  • 3 Eggs
  • 5 Cups Very Hot Water

Add 2nd phase of ingredients and begin mixer on medium-low speed. Quickly add 2 1/2 rounded Tbs of instant dry yeast while mixer is running. Mix for 10 minutes. 

NOTE: You may need to add a litte more flour white it is mixing if the dough doesn't begin to clean the sides of the bowl. Don't get it to stiff.

Take the dough hook out and cover the dough in the bowl. Let set until dough rises to the top of the lid. (Roughly doubles in size)

Flour a surface of countertop and put dough on area. Divide into 6 sections. Form into loaves, put into large non-stick pans, cover and let rise in warm place. (If not using non-stick pans you will have to put shortening or oil on the loaves.)

Let rise until light. Bake in oven for 30 minutes @ 325 degrees (Times vary on ovens and elevation, Set for elevation of 5,000ft)
